Turkish rice with pine nuts and currants

  


   

      My favorite rice.Little bit sweet, little spicy...This rice goes very well with meal, chicken or dinner with family.Some cooked with onions and tomato paste but actually I don't and the people whose traditional recipe is this rice, cooked like this.

     I've used Mehr Sedri here.It makes no matter the kind of rice,if it's delicious.


Ingredients:

2 cups rice (washed and  drained

2 tabel spoons currants

2 table spoons pine kernel

2 table spoons kernel of almonds ( peeled)

2 table spoons pistachio (unshelled)

1 cup chestnut (peeled and minced)

1/4 bunch dill (washed and minced)

2 tablespoons butter (I always mixed butter with virgin olive oil in half)

1 teaspoon cinnamon (this is essential)

1 teaspoon black pepper

1 teaspoon salt

2,5 cups water 


Directions:

1- Wash and drain the rice.

2- In a small pan saute the pine nuts and almonds in some oil until they become golden brown.(they tend to burn very fast be carefull)

3- In another pan add some butter and rice.Stir it at least 5 minutes until the rice becomes translucent.Add pine nuts,all spice, sugar, salt and currants.

4- Cover the rice with boiling water like cooking normal rice.Close the lid of the pan and let the rice cook for 15 to 20 minutes.(It depends on the rice)

5- Check from time to time.When the rice is cooked remove from heat and add chopped dill let cool for 30 minutes more.
